Texas Burger with Beer Cheese Sauce (1)

  • 2 large red onions, cut in ¾-inch slices

  • 8 pretzel buns

  • 8 lettuce leaves

  • 8 slices of tomato, sliced ½-inch thick

  • ½ cup pickled jalapeños, chopped

Preparation

Grilled Burger Preparation

  1. Step 1

    Start by heating the gas or charcoal grill to 400°F. Follow the the step-by-step guide in the notes section to learn how to properly set-up a grill.

  2. Step 2

    Shape into 8, ¾-inch thick patties. Season each side with salt and pepper. Make a small indention in the center of the burger with your thumb.

  3. Step 3

    Place burgers on oiled grates and grill. Cook 10-12 minutes to medium (160°F) doneness, turning once when you notice liquid pooling at the top of the meat. Remove patties from grill.

  4. Step 4

    Place buns, cut side down in skillet, cook 1 minute or until lightly toasted.

  5. Step 5

    Drizzle each side of onion slices with olive oil. Season with salt and pepper. Grill 5-7 minutes on each side or until onion is tender and has caramelized. Place burgers in buns and add grilled onion slice, lettuce, and tomato. Drizzle 2 Tbsp. beer cheese sauce on each burger. Evenly top with pickled jalapeño peppers.

Smoked Burger Preparation

  1. Step 1

    Set up a charcoal grill by removing the top grill grate and placing a 12-inch aluminum pan to one side of the grill and add ½ -1 cup of water to the pan.

  2. Step 2

    Arrange 4-5 lbs. of charcoal on the other side of the grill next to the water pan and add 5-7 pieces of wood chunks of your choice (i.e. mesquite or oak)

  3. Step 3

    Place the grill grate back on top.

  4. Step 4

    Light the coals and allow them to burn down until they have ashed over heating to 400°F.

  5. Step 5

    Place the uncooked patties and sliced onions on the grate over the water pan and close lid. Smoke on indirect heat for a total of 15 minutes. Flip the patties and close the grill lid to smoke another 10 minutes. Using a meat thermometer, check the doneness and remove when you have reached the internal temperature of 160°F.

  6. Step 6

    Place burgers in buns and add grilled onion slice, lettuce, and tomato. Drizzle 2 Tbsp. beer cheese sauce on each burger. Evenly top with pickled jalapeño peppers.

Texas Beer Cheese Sauce

  1. Step 1

    Melt butter in small saucepan over MEDIUM heat. Whisk in flour and cook, stirring until the mixture begins to brown, about 2 minutes. Whisk in the beer until smooth. Reduce the heat; cook until the foaming begins to subside and the mixture begins to reduce, about 5 minutes. Whisk in half and half and continue to cook, stirring occasionally until the sauce thickens, about 10 minutes.

  2. Step 2

    Remove from heat, stir in cheeses stirring until completely melted. Keep warm until ready to use.
