About Strawberries and Cream

Coming back to strawberries and cream also known as strawberry parfait or strawberry fool, I call this the best lazy dessert recipe. I have a good reason to say that. Weekends are the time when I am usually lazy and I really don't feel like cooking and baking. I love to just sit and relax with my loved ones.

My family loves dessert and it is only weekends we get to sit and spend some time together eating and chatting. On one such weekend, to satisfy sweet cravings for all of us, I ended up preparing this quick dessert specially because strawberries were in season.

My husband says that this is a popular food choice among tennis fans during Wimbledon Grand Slam. See FAQs for more information. This recipe is also called as Strawberries Romanoff where some variants use sour cream instead of whipped cream. If you combine sour cream, evaporated milk, heavy cream, sweetened condensed milk, and vanilla, and pour this mixture over strawberries, you get Mexican Fresas con Crema.

  • Strawberries - pairs really well with cream. Use strawberries that are juicy and sweet. You can also use frozen strawberries to make this dessert any time of the year. You can use a variety of berries if you prefer.
  • Sugar - helps to enhance the sweetness of the strawberries. When strawberries are tossed in sugar, it extracts the liquid from the strawberries making the dessert more flavorful. Use powdered sugar or confectioners sugar if needed.
  • Heavy Cream - adds a rich taste and creamy light texture to this dessert. Use whipping cream, half and half, condensed milk, or a combination of these if preferred.
  • Vanilla extract - add sweet flavor of vanilla to the dessert.

Step by Step Recipe

Step 1 - In a large bowl, add strawberries, sugar, vanilla extract and mix well.Keep this aside for 10 mins (preferably 1 hour) so that the juices are released from the fruit. If you are in hurry you can skip this or used powdered sugar.

Step 2 - In another bowl, whip together heavy cream, sugar, vanilla extract till you get medium stiff peaks.This dessert tastes the best when served chill.Arrange strawberries and cream in layers and keep in refrigerator till you are ready to serve. So this is perfect as a no-bake and make-ahead dessert!

  1. You can use any type of cream of your choice. Some love to combine sour cream, condensed milk, cream cheese, mascarpone cheese, etc., to make delicious and decadent strawberry and cream parfaits.
  2. Strawberries and cream dessert tastes best when served chill.
  3. Substitute sugarwith confectioners (powdered) sugarin the recipe if needed.
  4. For easy whipping,make sure the cream, bowl, and whisk are cold.
  5. Use full-fat nut-based (coconut milk) or plant-based (soy milk) for a dairy-free dessert.
